旨醞 鐵板料理

以「時光佐味，慢釀醞味」為核心理念，〈旨醞 鐵板料理〉關乎時光、關於流動；關於醞釀、也關乎熟成。 「時間」是本場空間的重要命題，因此如何「將時間具象化成一種易感知的空間語言」，是設計師反覆推敲的設計任務。

入口門面的設計邀請日本職人現地施作，以版築工法打造磚紅廊道。壁材使用日本工學院大學建築學部教授共同開發的負離子漆喰壁材，施作完成會持續釋放與森林等量的負離子。層層堆疊、壓實的紅土肌理勾勒出年輪剖面的意象，刻印時光流動的痕跡。身處其中，彷彿正在穿梭時空隧道。粗獷與細膩在此交融，成為序章。

穿越時空之門後轉入主空間，設計師選擇以珊瑚橙色的義大利木皮作為基底，在光線映照下溫潤柔和，如夕陽餘暉、也如慢醞熟成的暖意迴盪。搭配金屬鐵件、石材與玻璃等異材質結合，讓和諧氛圍中仍保有節奏起伏。主餐區上方的懸吊層架，以鏤空金屬架構、精美弧線比例和琥珀色佳釀的設計，建構出一座漂浮的時空航站，在鏡面反射與流光穿透中，不斷變化表情。

甜點作為一場用餐的 final touch，肩負最後一幕的重要意義。因此團隊在規劃甜點區時，期望打造一種令人 期待且愉悅的場域轉換。牆面選用義大利羅馬洞石，其天然肌理與色澤，映照出歲月沉澱的自然質感，與相生相息的花藝共榮。若是於晚間時段造訪的賓客，除了欣賞窗外迷人的高空夜景，也可以留意室內綠意中的點點螢光，與夜空中的星光相互輝映。

從空間動線、材質到視覺焦點的規劃設計，設計師每一層面的鋪陳與詮釋，皆在回應「時間」和「醞釀」的主旨。敬獻給樂於慢慢品味的你，前來見證時光流動的「醞味」。

With the core philosophy of “Savor Life’s Flavors, Perfected With Time,” ZHIYUN Teppanyaki is a celebration of time and transformation—of moments unfolding, of flavors deepening, of life itself maturing through experience. The design centers around one fundamental idea: how to translate “the sense of time” into a tangible, perceivable spatial language—a challenge the designers approached with careful reflection and poetic precision.

The entrance corridor was crafted on-site by skilled Japanese artisans, using the traditional rammed earth technique to form a striking terracotta-toned tunnel. The walls are finished with “Shikkui” material co-developed by the Faculty of Architecture at Nippon Institute of Technology, specially formulated to continuously release negative ions—at levels comparable to a forest environment. Layer upon layer of compacted soil forms a texture that echoes the cross-section of tree rings, quietly engraving the passage of time. Stepping into this corridor feels like traversing a time tunnel— where raw textures and refined craftsmanship converge, setting the tone for what lies ahead.

Upon entering the main space, the palette shifts to a softer register. Walls clad in Italian TABU veneer in coral orange catch the light with a sunset-like warmth, evoking the slow, steady heat of flavor maturing over time. The interplay of materials—metalwork, stone, and glass—creates rhythm within harmony, where contrast breathes life into stillness. Above the dining counter, a floating metal shelf structure features delicate curves and amber-toned bottles, resembling a suspended time station, constantly shifting in reflection and light, echoing the fluidity of time.

As the final chapter of the dining experience, dessert holds symbolic weight. The design team curated this area as a spatial transition——a moment of joy and anticipation. Roman travertine stone was selected for its naturally aged textures and warm hues, harmonizing with floral arrangements that mirror the cycles of nature. By night, the space transforms—the city’s glittering skyline becomes a backdrop to glowing greenery within, where ambient lights sparkle like fireflies dancing in tandem with the stars.

From spatial flow to material curation, from focal elements to subtle transitions, every layer of the design responds to the essence of “time” and “fermentation”. A tribute to those who savor life slowly, inviting them to witness the flavor of time itself.
